From Junk to Wholesome in six minutes!
All ingredients can be purchased from inexpensive supermarkets. Buy organic where possible :)
Rice noodles for one person
Teaspoon mild curry powder
Small sprig coriander
2 large chestnut mushrooms
1 x garlic clove finely sliced
1/2 thumb size of scotch bonnet pepper finely sliced
Small handful mangetout
Salt and pepper to taste
1 x sachet miso (easy).
6 tablespoons water
Soak the rice noodles in hot water until soft.
Meanwhile, saute all the other ingredients (except miso) in olive oil in a wok until mushrooms are soft.
Add the miso with six tablespoons of water.
Add the noodles
Saute together for a minute
Remove from wok with or without remaining water and you're good to go.
